When the body is healthy, the pH of the blood, saliva and spinal fluid is 7.4.  The pH of saliva is a reflection of the extracellular fluid and available alkaline mineral reserves available in the body.  Alkaline minerals include calcium, magnesium, sodium, potassium, manganese and iron.  Alkaline minerals are essential for maintaining health as they are used to buffer and remove acidic waste from the body.  This prevents autointoxication from mucoid plaque build-up in the intestines.  Most degenerative diseases including cancer, arthritis, tooth decay, kidney stones and gallstones are contributed to excess acidity in the body.

Food is burned and the ash, which contains the mineral content, is mixed with water.  The result determines whether it is an alkaline or acid producing food.  A high level of acidity in the body generates free radical activity which damages cells.  This sets the internal environment for accelerated aging, a loss of vital energy, illnesses and disease.

Although it might seem that citrus fruits would have an acidifying effect on the body, the citric acid they contain actually has an alkalinizing effect in the system.

Note that a food's acid or alkaline forming tendency in the body has nothing to do with the actual pH of the food itself. For example, lemons are very acidic, however the end products they produce after digestion and assimilation are very alkaline so, lemons are alkaline forming in the body. Likewise, meat will test alkaline before digestion, but it leaves very acidic residue in the body so, like nearly all animal products, meat is very acid forming.
